A good apricot is plump and firm, but not too hard. If the apricot is hard, it's underripe, while mushy means overripe.
Look for fruits that have a deep orange-gold color rather than those that are pale orange or yellow.
Keep an eye out for any bruises, major discolorations, or shriveled spots.
Give a good sniff: ripe apricots have a nice floral smell. Too sweet or fermented might mean the apricot is past its prime.
Once your apricot is fully ripened, store it in the fridge for longest life.
If the apricot needs to ripen it a bit more, you can leave it out for a day or two until its good and ready.
