The fruit should have a nice give to it. What you're looking for is nice and soft, without feeling too mushy.

The fig's exterior should be clean and dry, without any drips of liquid (crystalized or otherwise).

Smell

One of the most important aspects to a good fig is it's smell. Figs can begin to ferment and go sour especially quickly, son give it a good sniff — a sour aroma means that it's already begun to turn.
