Give a good squeeze: you’re looking for for tight, firm heads with nice sharp points at the tips of the leaves — but be careful, they can hurt!

The leaves should be really vibrant, and break with a sharp crack when folded.

Look for a gorgeous, dusky olive green color across the leaves, which can often dip to purple nearer the tips on many varieties.
