The skin on your beans should be smooth, and taut, and the pod should feel firm, and not bend too much.
Look for a vibrant green color from tip-to-tip across the pod — although some varieties that have purple coloring too!
Avoid pods with many blemishes or brown spots.
To trim, or 'french', your beans, simply snap off the stem end from the pod. Beans often come pre-trimmed, so don't worry too much if you can't seem to find the stems!
Theres no need to worry about the other end – you can trim them if you'd like, or just leave them as-is.
Despite the name, most varieties these days are sting-less, so you generally don't need to worry too much about removing them.
