Look for firm, vigorous stalks, that stand fully upright, and are not wilting or drooping at all.
Avoid any scallions that feel slimy at all, which mens they’re well past their prime.
A deep and very vibrant green color should be flush across the tops of the stalks, making way to white bases — but the color should seem vibrant all throughout.
Look out for stalks that are wilting or seem unable to hold themselves upright.
Unlike many other aromatics, scallions need to be stored in the fridge. They do best in a humid environment, so try wrapping in a moist cloth or paper towel before storing in a plastic bag.
You can also place them upright in a couple of inches of water, in the fridge, with the jar kept in a plastic bag — you’ll want to change the water every day or two, though.
