Look for a tight, firm head of cabbage that feels heavy for its size.

Avoid any head with soft, loose, or wilting leaves around the outside, or any soft spots.

Smell is a good indicator of quality when it comes to a cabbage, but its actually the inverse of many other produce: you're looking for a cabbage that doesn't smell very cabbage-y.
