Look for a nice smooth skin on the outside for the best sunchokes. They should feel nice and dense, without any soft spots.
Sunchokes have got the most wonderfully knobbly appearance, like funny, dirty little potatoes.
Some varieties are white and some are purple, but the white are usually best tasting
As soon as you cut them, make sure to get your sunchokes straight into a bowl of cold water to keep them from going black.
