AKA: BEETROOT

Touch

Give a good squeeze: even more than firm, look for beets that are hard to the touch.

You’re also looking for a nice smooth skin across the surface of the beet.

Finally, look for a beet that feels a bit heavy for a it’s size when tossed in the hand.

See

A sure sign of a fresh specimen, is a beet with the long tail at the bottom (AKA: the taproot) still attached.
