Look for a nice firm celeriac that has a smooth skin and avoid any blemishes or soft spots.
Color isn’t a huge signifier when it comes to celeriac — some have a greenish tint, and some don’t, and neither really means too much.
If there are any stalks still attached, you’d be best to remove them before storing in the fridge.
