First and foremost: look for a squash thats heavy for its size. Thats going to be your single best sign of quality.
Past that, you’re looking for a really firm texture across the flesh of the gourd.
You’re looking for a dull colored skin, as a shiny appearance can be a sign of immaturity on the gourd.
Gourds can be all different colors, with some being smooth and other bumpy, but generally speaking you’re looking for a squash without too many rough or scaly blemishes.
So long as its not cut open, definitely keep your squash out of the fridge, and it’ll keep perfectly at room temperature for a few weeks.
